Summer Pasta with Sweet Corn and Basil

This Summer Pasta with Sweet Corn and Basil is a fresh and quick pasta dish that is perfect for the warmer weather.   • 10 oz farfalle (280g)
  • tbsp salted butter
  • 1/4 tsp cracked black pepper
  • cups sweet corn
  • 1/3  cup fresh basil leaves
  • 1/4 cup pine nuts


  1. Bring a large pan of water to boil and then add a generous amount of salt.
  2. Add the farfalle and cook until al dente. (around 1 minute less than the packet suggests)
  3. Reserve a cup of the pasta cooking water and then drain the pasta.
  4. Put the empty pan back over a medium heat and add in the butter and black pepper.
  5. Add in 1/3 cup of the pasta water and stir well until you have a thick glossy emulsion.
  6. Add the corn and the drained pasta. Then stir gently to coat.
  7. Remove from the heat and stir through the basil.
  8. Serve garnished with pine nuts.
