This Charred Zucchini and Thyme Pasta is the perfect mid-week vegetarian pasta. The sweet smoky charred zucchini are stirred through lemon, thyme and garlic pasta, to create a delicious and simple dinner.
The key to this dish is to really charred the zucchini. The caramelized flavor adds a great smokiness to the dish and also a nutty sweetness.
Make sure you get the pan really hot so the zucchini chars before it gets too soft. We find it easiest to charred the zucchini in strips and cut it into chunks after. This makes it much easier to turn in the pan.
Appetizer: This vegetarian pasta is delicious as a main meal. Before you start enjoy some bruschetta topped with smashed tomato and basil. Drizzle them generously with extra virgin olive oil and season well.
Wine: The charred zucchini here pair fabulously with some more savory reds, like a Syrah or a Merlot. For those preferring a white wine then a young unoaked chardonnay will compliment the sweetness and floral notes in this dish.
Charred Zucchini and Thyme Pasta
- 12 oz long pasta
- 2 zucchini
- 1 tbsp olive oil
- 2 tbsp extra virgin olive oil
- 2 garlic cloves - chopped
- 1 1/2 tsp fresh thyme leaves
- 1 lemon (zest and juice)
- 1 cup grated parmesan
Place a heavy based skillet or griddle pan over a medium high heat and leave it to get hot.
Bring a large pan of boiling water to the boil.
Salt it generously and cook the pasta for a minute less than the packet suggests.
Reserve a cup of the pasta cooking water and then drain the pasta.
Whilst the pasta is cooking top and tail the zucchini and in half length ways and then again into quarters (see the video)
Pour the olive oil into the skillet and then add the slices to the skillet. Cook over a high heat until charred and starting to soften.
Remove the zucchini from the pan and reduce the heat.
Add the extra virgin oil to the skillet and add in the garlic and thyme. Stir and then add in the zest and juice of the lemon.
Add the drained pasta and 1/4 cup of the reserved cooking water.
Stir well to combine adding another 1/4 cup of pasta water as needed.
Chop the zucchini into chunks and add it to the pasta.
Check the seasoning and then serve immediately with plenty of grated parmesan.
